Chicken Mango Salad Bites is just a fancy way of me saying eat this chicken mango salad on top of some tostones. I feel like whenever you throw in the word ‘bites’ it makes a dish sound cute and fancy. So roll with it okay? Okay.
Summertime is officially here which means I will be living off of some variation of chicken salad. Since mangos are in peak season, why not combine the two?! We all know my affinity for mangos. I could live off them for the rest of my life. Throw in some tostones and it is a party!
This is definitely one of those stupid easy recipes that comes together in no time. I totally took the shortcut route and used rotisserie chicken I bought from Whole Foods so the only thing I had to cook were the tostones. If you wanted to take it a step further, make the tostones in the air fryer so you don’t have to turn on your stove and heat up that kitchen. Win-win all around!
These chicken mango salad bites are also great if you’re hosting people this summer! Make a large batch of the chicken mango salad and tons of tostones so people can build their own little bites. They are the perfect party food appetizers and a total crowd pleaser.
To all my meal prepping friends, this is definitely meal prep friendly! I recommend mixing all the ingredients but the dressing together. When you are ready to eat it, that is when you douse it in the delicious mango dressing, and enjoy.
As always, make this recipe your own! Use whatever veggies you have on hand. Make the dressing spicier if you want. Make it more mango-y if you want. There are no limits to how this is made.
The only non-negotiable are the mangos. So go pick up some ripe mangos and get to it!
Chicken Mango Salad Bites (Whole30, Paleo)
Chicken Mango Salad
- 3 cups cubed or shredded cooked chicken
- 1 mango diced
- ½ red onion finely diced
- ½ cup chopped cilantro
- kosher salt
- black pepper
- 10-12 cooked tostones
- 1 cup diced mango
- 1 serrano chili pepper or jalapeno pepper
- ½ cup loosely pack cilantro
- 3 garlic cloves peeled
- 1 lime juiced
- 1 tsp kosher salt
- ½ cup olive oil
- water optional
Chicken Mango Salad
Add all ingredients but kosher salt, black pepper, and tostones into a large bowl.
Mix in half of the mango dressing.
Taste and adjust to see if you want more dressing or not. Season with kosher salt and black pepper to taste.
Lay out tostones and top with chicken mango salad.
Add ingredients but the olive oil to a blender or food processor.
Blend until well combined and then slowly pour in the olive oil.
If you want a thinner dressing, start by blending in 1 tbsp of water to the dressing. Add more until desired consistency.
