I love a good ole avocado toast, but sometimes you need to switch it up. Variety is the spice of life, and I believe that goes for your breakfast toast as well. Obviously, we’re using tostones because my campaign to make tostones the new sweet potato toast is still going strong. I’m so excited to be partnering with Jones Dairy Farm to bring a few different breakfast tostones toast ideas to you.
After doing my first Whole30, I always try to buy products with quality ingredients and always try to skip out on the sugar if possible. Breakfast sausages, whether it’s patties or links, are my absolute favorite, but finding sugar free breakfast sausages without questionable ingredients can sometimes be hard to find. Here are a few breakfast tostones toast ideas I have been loving, and I hope you enjoy them too!
Eggs Benedict Tostones Toast:
Serves 2 | Prep time: 10 minutes | Cook time: 10 minutes
4 slices of Jones Dairy Farm No Sugar Chicken Sausage Patties
4 tostones bun sized pieces
4 poached eggs
1 lb asparagus, ends trimmed
1/2 cup melted ghee or clarified butter
3 large egg yolks, room temperature
1 tbsp lemon juice
1/4 tsp cayenne pepper
Pinch of kosher salt and black pepper
Directions:
Prepare chicken sausage patties according to package. Set aside until ready to use.
In a blender, place egg yolks, lemon juice, cayenne pepper, kosher salt and pepper. Cover and start blending until everything is combined.
While the blender is still going, very slowly pour the still warm melted ghee into the blender until sauce starts to thicken. Continue until all of the ghee is completely combined. You can also use an immersion. Put everything into a tall cup, start blending with immersion and slowly pour warm melted ghee until well combined and sauce thickens.
Taste and adjust seasoning if needed.
To make the toast: place your favorite greens on the bottom, then a chicken sausage patty, then place a poached egg on top, and finally pour hollandaise sauce over the egg.
Avocado, Tomato, Basil Toast:
Serves 2-3 | Prep time: 15 minutes | Cook time: 6-8 minutes
4 slices Jones Dairy Farm No Sugar Hickory Smoked Bacon, cooked and crumbled
4-6 tostones bun sized pieces
2 avocados
2-3 tomatoes, sliced
1 cup arugula
1/4 cup basil leaves, chiffonade (thinly sliced)
Half a lime, juiced
Balsamic glaze
Kosher salt and black pepper
Directions:
Smash avocados in a bowl with lime juice and a pinch of kosher salt and black pepper.
Spread avocado on tostones toast.
Top with arugula, basil, sliced tomatoes, crumbled bacon, and drizzle balsamic glaze on top.
Pesto Walnut Toast:
Serves 2-3 | Prep time: 10 minutes | Cook time: 3-4 minutes
1 package Jones Dairy Farm No Sugar Turkey Sausage Links
1/4 cup pesto
1/4 cup toasted chopped walnuts
1-2 tbsp nutritional yeast
4-6 tostones bun sized pieces
Directions:
Heat the turkey sausages according to package and then slice into little coins.
Spread pesto on tostones toast.
Top with chopped walnuts, sliced turkey sausages, and sprinkle nutritional yeast on top.

Recipe Notes
Prep and cook time do NOT include making the tostones.
Pro-tip, make a bunch of tostones but do NOT re-fry them after you flatten the tostones. Let cool, then freeze in a single layer, and then move to a container. Pull out tostones whenever you want to make toast and just quickly fry them on both sides for 3-4 minutes straight from the freezer!
