In the world of Instant Pot, I am still loyal to my good ole slow cooker. She hasn’t failed me, and to be honest, I love coming home to the smell of something cooking in it like my slow cooker sweet potato and beef chili. I’m sure someone out there can convert this recipe for the Instant Pot, and if you do, let me know and I will add it to the instructions giving you full credit.
I’ve always been a fan of bean-less chili. Beans just don’t do it for me, and I always think of the bean song that I was taught from an early age at school: “Beans, beans, the magical fruit / The more you eat, the more you toot.” As an awkward seven year old, public humiliation was my biggest fear, and potentially farting in public because of beans was not going to happen.
I still remember when one boy in my class farted after Mexican food was served for lunch, and I nearly died of embarrassment for him. He handled it like a champ because seven year old boys are gross, but I wasn’t having it. So needless to say, I avoided beans for a majority of my life.
As an adult, they still don’t do it for me, but I have the excuse of not being able to tolerate them. A much better excuse than my fear of farting in public. Now that we’ve had a thorough discussion of bodily functions I find embarrassing, please make this slow cooker sweet potato and beef chili. You won’t regret it, and there probably won’t be any tooting after you eat it. I can’t make promises though.

Slow Cooker Sweet Potato & Beef Chili
Ingredients
- 2 large sweet potatoes diced
- 1 lb lean ground beef
- 1/2 large yellow onion diced
- 3-4 garlic cloves divided, minced
- 2 cups beef bone broth
- 1 14.5 oz can diced tomatoes, drained
- 1 tbsp chili powder
- 1 tsp cumin powder
- 1/2 - 1 tsp cayenne pepper
- depends on spice preference
- 1/2 tsp smoked paprika
- 1/2 tsp coriander powder optional
- 2-3 tsp kosher salt
- 1-2 fresh ground black pepper
- Avocado oil
Toppings:
- 1/4 cup cilantro chopped
- 1 avocado diced
- Lime wedges
- Hot sauce
Instructions

Preheat skillet with about 1 tbsp of avocado oil over medium-heat. Add half of the minced garlic and cook until fragrant.

Add in ground beef with salt and pepper. Cook until almost all ground beef is browned. Drain excess oil.

In the slow cooker, layer in diced sweet potato, onion, remaining garlic, salt and pepper. Stir to make sure everything is seasoned then add in diced tomatoes, spices, ground beef and beef bone broth.

Stir chili and cook on low for 6-8 hours depending on your slow cooker.

Serve warm with toppings.
