Breakfast Tostones Toast Ideas

Ingredients

Sausage Eggs Benedict Tostones Toast:

4 Jones Dairy Farm No Sugar Chicken Sausage Patties
4 tostones bun sized pieces
4 poached eggs
½ cup melted ghee or clarified butter
3 large egg yolks room temperature
1 tbsp lemon juice
¼ tsp cayenne pepper
Pinch of kosher salt and black pepper

Avocado, Tomato, Basil Toast:

4 slices Jones Dairy Farm No Sugar Hickory Bacon cooked and crumbled
4-6 tostones bun sized pieces
2 avocados
2-3 to matoes sliced
1 cup arugula
¼ cup basil leaves chiffonade (thinly sliced)
Half a lime juiced
Balsamic vinegar
Kosher salt and black pepper

Pesto Walnut Toast:

1 package Jones Dairy FarmNo Sugar Turkey Sausage Links
¼ cup pesto
¼ cup toasted chopped walnuts
1-2 tbsp nutritional yeast
4-6 tostones bun sized pieces

Instructions

For the eggs benedict tostones toast:

Prepare chicken sausage patties according to package. Set aside until ready to use.
In a blender, place egg yolks, lemon juice, cayenne pepper, kosher salt and pepper. Cover and start blending until everything is combined.
While the blender is still going, very slowly pour the still warm melted ghee into the blender until sauce starts to thicken. Continue until all of the ghee is completely combined. You can also use an immersion. Put everything into a tall cup, start blending with immersion and slowly pour warm melted ghee until well combined and sauce thickens.
Taste and adjust seasoning if needed.
To make the toast: place your favorite greens on the bottom, then a chicken sausage patty, then place a poached egg on top, and finally pour hollandaise sauce over the egg.

For the avocado, tomato, basil toast:

Smash avocados in a bowl with lime juice and a pinch of kosher salt and black pepper.
Spread avocado on tostones toast.
Top with arugula, basil, sliced tomatoes, crumbled bacon, and drizzle balsamic vinegar on top.

For the pesto walnut toast:

Heat the turkey sausages according to package and then slice into little coins or at a diagonal to be fancy.
Spread pesto on tostones toast.
Top with chopped walnuts, sliced turkey sausages, and sprinkle nutritional yeast on top of each pieces of toast.

Recipe Notes

Prep and cook time do NOT include making the tostones.

Pro-tip, make a bunch of tostones but do NOT re-fry them after you flatten the tostones. Let cool, then freeze in a single layer, and then move to a container. Pull out tostones whenever you want to make toast and just quickly fry them on both sides for 3-4 minutes straight from the freezer!
