Whether you’re lactose intolerant or just want a new dip to try, this Salsa con Queso will be your go-to! This no cook dip comes together in 10 minutes or less and will be definitely be a crowd favorite.
One of my favorite store bought dips is the Tostitos Salsa con Queso dip and recently I had a huge craving for it. Since my little lactose intolerant heart can no longer have it, obviously I went into the kitchen to recreate a dairy free version!
Since I already had a really good base from my Queso Fundido con Chorizo dip, I knew all I had to do was make a few adjustments and I would have homemade salsa con queso in no time.
What’s great about this recipe is that it’s a no cook recipe and literally comes together in less than 10 minutes because I skipped a few steps and used store bought salsa.
You can definitely make your own salsa for this recipe but there’s absolutely nothing wrong with using store bought. Give yourself a break!
Oh, and before some of you come after me, if you don’t have a high power blender, it will take a little more than 10 minutes to make this recipe. You’ll need to soak your cashews in hot water for at least 30 minutes so they will soften up. This will ensure they get super creamy when you go to blend it up.
I served mine with tostones. You all know my infinity for tostones, but this salsa con queso would be great with regular tortilla chips and/or sliced up veggies. It would also be great on top of tacos or nachos!

Salsa con Queso (Paleo, Vegan, Keto)
Ingredients
- 1 cup raw cashews* or macadamia nuts
- 3 tbsp nutritional yeast
- ½ tsp kosher salt more for taste
- ¼ cup salsa
- 1 cup hot water
Instructions

Add all of the ingredients into a how power blender or food processor.

Blend until well combined and smooth.

If not using right away, store in an airtight container for up to a week.
Recipe Notes
*If you don't have a high power blender or food processor, soak the cashews in hot water for at least 30 minutes. Remove from water then add to the blender. You will still need to add the 1 cup of hot water to the dip.
