Sweet and Spicy Pulled Pork Sandwiches is perfect for those days you’re craving a good pulled pork sandwich. One of the best pulled pork sandwiches I’ve ever had was at a food festival in NYC from a food truck that drove all the way up from Tennessee. It was so good, I ordered a second one for later but ended up eating it in the cab ride home. Shout out to my cabbie who was cool with me eating the messy sandwich while blasting Jay Z’s best hits.
I like to think we were both living our best lives at the time. When I was doing one of my many rounds of Whole30, all I could think about was that sandwich and thus began the journey to recreate it. So here we are with my sweet and spicy pulled pork sandwiches!
This sandwich has the perfect balance of sweet and spicy (which might be my favorite flavor combination). The coleslaw gives you the crunch you need, and the sweet potatoes used as buns are the healthier cousin to potato bread buns (which should be used if you’re not doing a Whole30 or have a gluten intolerance). Add this recipe to your menu and I’m sure it’ll be a summer hit!

Sweet and Spicy Pulled Pork Sandwiches
Ingredients
Pulled pork
- 3-4 lbs pork shoulder
- 1 tsp kosher salt per lb
Sweet and spicy broccoli coleslaw
- 1 bag broccoli slaw mix
- 1 jalapeño julienned
- 1/2 apple julienned (use a sweet apple like gala)
- 1/2 tbsp mayo
- 1 tbsp BBQ sauce
- 1 tsp kosher salt
- 1/2 tsp black pepper
Sweet potato "buns"
- 2 large sweet potatoes sliced
- 1 tbsp avocado oil
- 2 tsp kosher salt
- 1 tsp black pepper
Sandwiches:
- Pulled pork
- Sweet potato "buns"
- Sweet and spicy broccoli coleslaw
- BBQ sauce
- Jalapeno slices
Instructions
Pulled pork

Season pork shoulder with salt.

Place pork shoulder in slow cooker.

Cook on low for 12-14 hours depending on size and slow cooker.

Shred pork shoulder with two forks.
Sweet and spicy broccoli coleslaw

Mix all ingredients in a bowl.

Season to taste with salt and pepper.

Refrigerate for at least an hour or until ready to use.
Sweet potato "buns"

Pre-heat oven to 400F.

Toss sweet potato slices with avocado oil, salt and pepper

Place on baking sheet in one layer.

Roast for 35-40 minutes flipping half way through.

Note: this can also be done on a grill if you're BBQ-ing

Smear BBQ sauce on sweet potato "buns"

Top buns with pulled pork, broccoli coleslaw and jalapeno slices (optional).
