I am rekindling my love for cauliflower mash, and this Instant Pot garlic cauliflower mash just reminded me why I loved it so much back in the early days of Whole30. Cauliflower mash is the reason why I like cauliflower in general. I use to HATE cauliflower but when I did my first Whole30, white potatoes weren’t allowed and I was getting so sick of sweet potatoes.
So I made myself repeatedly eat cauliflower until I liked it. I do that with a lot of food I don’t like except for peas. Green peas can burn in the depths of hell, but I digress. Back to this delicious Instant Pot garlic cauliflower mash that is perfect as a side dish for any meal. I love them with meatballs especially! If you don’t have an Instant Pot, I have the stove top method over here.
Also, another thing I recommend getting is a steamer that fits into your Instant Pot. You can use the trivet that comes with it but it’ll be a little difficult removing it with the cauliflower on it because the cauliflower will be super tender. I have this great silicon one from Amazon that you can purchase here. It has handles and makes removing it so much easier. Plus, nothing will fall through.
Anyway, this garlic cauliflower mash is super creamy if you want it to be or can be a bit chunky if you like some texture in your mash. The world is your oyster and you do what you want. I prefer mine creamier, so I blend it in a blender but you can use a potato masher if you want it chunkier.
As always, yes this is great for meal prepping! I like make garlic cauliflower mash bowls with protein and greens. I put it in one of my meal prep containers, and then heat it up when I’m ready to eat. I’ve also eaten it cold but people get weirded out by that for some reason. To each their own, I say!
Instant Pot Garlic Cauliflower Mash (Whole30, Paleo)
Ingredients
- 1 large cauliflower
- 4-6 garlic cloves peeled
- 1 tbsp ghee
- 2 tsp kosher salt more for taste
- 1 tsp black pepper more for taste
- 1 cup water
Instructions

Remove the core from the cauliflower and cut into large florets.

Add the water to the Instant Pot and insert the steam basket.

Place the cauliflower florets and garlic cloves onto the steamer basket and then season it with the kosher salt.

Put the lid onto the Instant Pot, seal it, press the "pressure cook" button and set the time for 3 minutes.

Once finished, manually release the Instant Pot. The cauliflower should be almost fall apart fork tender.

Place the cauliflower into a blender, add in the ghee, and black pepper. Blend until desired consistency.

If you want a chunkier garlic cauliflower mash. place the cauliflower, garlic, ghee, and black pepper into a bowl and mash with a potato masher until desired consistency.

Taste the cauliflower mash to see if you need more kosher salt and black pepper.
