I love meatloaf. I love burgers. I love The New Primal’s Classic BBQ Sauce. So I guess it makes sense that I love these bbq meatloaf burgers (with crispy onions), right? Right. The crispy onions are the perfect addition to this burger, and you’ll be making them all the time to put on top of all of your burgers or salads. Trust me. They’re so good, and add a nice texture to everything.
This recipe was inspired by my love of meatloaf sandwiches. I love using leftovers the next day to create an epic sandwich. I decided to make the meatloaf burgers because it guaranteed juiciness but it still had that meatloaf feel to it. Does that make sense? If not, just roll with it.
I think meatloaf gets a bad rep because people don’t know how to cook it, and it just becomes this big dry loaf. That doesn’t sound appetizing or appealing at all. Making them into burgers will give you that meatloaf flavor but you won’t have a hunk of meat that is overcooked and dry. Win-win all around!
These bbq meatloaf burgers with crispy onions are perfect any night of the week, and they’re perfect for meal prepping. I (obviously) sandwiched mine in between tostones buns, but you can throw it on top of a salad or make a lettuce wrap with it.
The possibilities are endless, and the world is your oyster. They’re also perfect all year round. Since it’s summer, you can easily throw these on the grill to get that smoky flavor. During the winter, make these in the oven and serve it with mashed potatoes or other roasted veggies. If this doesn’t make you a meatloaf lover, I don’t know what will!
BBQ Meatloaf Burgers with Crispy Onions
Ingredients
BBQ Meatloaf Burgers:
- 1 ½ lbs ground beef
- 1 large egg
- ½ onion finely diced
- 1 garlic clove minced
- ¼ cup + 2 tbsp BBQ sauce
- 1 tsp paprika
- 1 tsp kosher salt
- ½ tsp ground black pepper
- ½ tsp garlic powder
- ½ onion powder
- 2 tbsp avocado oil
Crispy Onions:
- 1 onion thinly sliced
- 2 eggs
- ½ cup arrowroot flour or tapioca flour
- 1 tsp kosher salt
- ½ tsp ground black pepper
- ½ tsp garlic powder
- ¼ cup avocado oil
Instructions
BBQ Meatloaf Burgers:

Preheat oven to 350F. Line a baking sheet with parchment paper.

In in skillet, preheat over medium heat with 2 tbsp of avocado oil, diced onion and minced garlic.

Saute for 5-7 minutes or until onions become translucent. Remove from heat and set aside.

In a large bowl, add in ground beef, egg, ¼ cup BBQ sauce, seasonings, and the sauteed onion and garlic.

Mix until well combined, but don’t overwork the meat.

Once mixed, form into 6 burger patties. Place on baking sheet then use the rest of the BBQ sauce to spread it on top of the burgers.

Bake for 25-30 minutes depending on thickness of burgers.
Crispy Onions:

Meanwhile, preheat a skillet over medium-high heat with avocado oil.

In a shallow bowl, crack the eggs and beat until well combined.

In another shallow bowl, mix in arrowroot flour, kosher salt, black pepper, and garlic powder.

Add the onion slices to the eggs making sure they are completely coated.

Remove onion slices and place in arrowroot flour mixture. Make sure the onion slices are coated.

Using tongs, remove onions from arrowroot flour mixture, shake off excess, and then add to the preheated skillet.

Fry the onion slices for about 7-10 minutes or until golden brown making sure to flip the onions every so often.

Serve the crispy onions over the meatloaf burgers with a little more BBQ sauce.
