  1. Dice the yellow potatoes making sure they are the same size.

  2. In a large bowl, add the potatoes, kosher salt, black pepper, and garlic powder. Mix until well combined and then add the avocado oil.

  3. Toss the potatoes until well coated with the oil and then add the arrowroot flour.

  4. Mix until the all the potatoes are coated with the arrowroot flour.

  5. Add the potatoes to the air fry basket.

  6. Cook at 400°F for 18 minutes shaking the potatoes halfway through.

  7. Best to serve the potatoes warm!
