Add all ingredients but kosher salt, black pepper, and tostones into a large bowl.
Mix in half of the mango dressing.
Taste and adjust to see if you want more dressing or not. Season with kosher salt and black pepper to taste.
Lay out tostones and top with chicken mango salad.
Add ingredients but the olive oil to a blender or food processor.
Blend until well combined and then slowly pour in the olive oil.
If you want a thinner dressing, start by blending in 1 tbsp of water to the dressing. Add more until desired consistency.
