Chicken Mango Salad Bites (Whole30, Paleo)

Chicken Mango Salad

  • 3 cups cubed or shredded cooked chicken
  • 1 mango diced
  • ½ red onion finely diced
  • ½ cup chopped cilantro
  • kosher salt
  • black pepper
  • 10-12 cooked tostones

Mango Dressing

  • 1 cup diced mango
  • 1 serrano chili pepper or jalapeno pepper
  • ½ cup loosely pack cilantro
  • 3 garlic cloves peeled
  • 1 lime juiced
  • 1 tsp kosher salt
  • ½ cup olive oil
  • water optional


Chicken Mango Salad

  1. Add all ingredients but kosher salt, black pepper, and tostones into a large bowl.

  2. Mix in half of the mango dressing.

  3. Taste and adjust to see if you want more dressing or not. Season with kosher salt and black pepper to taste.

  4. Lay out tostones and top with chicken mango salad.

Mango dressing

  1. Add ingredients but the olive oil to a blender or food processor.

  2. Blend until well combined and then slowly pour in the olive oil.

  3. If you want a thinner dressing, start by blending in 1 tbsp of water to the dressing. Add more until desired consistency.
