Instant Pot Garlic Cauliflower Mash (Whole30, Paleo)

  • 1 large cauliflower
  • 4-6 garlic cloves peeled
  • 1 tbsp ghee
  • 2 tsp kosher salt more for taste
  • 1 tsp black pepper more for taste
  • 1 cup water


  1. Remove the core from the cauliflower and cut into large florets.

  2. Add the water to the Instant Pot and insert the steam basket.

  3. Place the cauliflower florets and garlic cloves onto the steamer basket and then season it with the kosher salt.

  4. Put the lid onto the Instant Pot, seal it, press the "pressure cook" button and set the time for 3 minutes.

  5. Once finished, manually release the Instant Pot. The cauliflower should be almost fall apart fork tender.

  6. Place the cauliflower into a blender, add in the ghee, and black pepper. Blend until desired consistency.

  7. If you want a chunkier garlic cauliflower mash. place the cauliflower, garlic, ghee, and black pepper into a bowl and mash with a potato masher until desired consistency.

  8. Taste the cauliflower mash to see if you need more kosher salt and black pepper.
