Turn on Instant Pot and set to saute mode.

Meanwhile, cut the pork butt into chunks.

Season the pork butt chunks with kosher salt, black pepper, and garlic powder. Make sure all the pieces are coated.

Once the Instant Pot is hot, add in the oil, and let it heat up for a few minutes.

Add the pork butt into the Instant Pot, and sear on all sides for a few minutes.

When pork butt is seared, hit the cancel button, add the water to the Instant Pot, and then put on the lid. Make sure the to seal it.

Press the "pressure mode" button, then set the timer to 1 hour and 30 minutes.

When the time ends you can let it naturally release or wait 10 minutes and then manually release.

Shred the pork and store in an airtight container. This also freezes well.
