Preheat skillet over medium heat with 1 tablespoon ghee. Add onions, season with 1 teaspoon of kosher salt and saute until caramelized and browned. Set aside.
-
Meanwhile, mix ground beef with remaining kosher salt and pepper. Divide ground beef into 8 equal sized balls (or quarter pound balls) and then flatten into thin burger patties.
-
Reheat skillet with 1 tablespoon ghee over medium-high heat. Place burgers on skillet and cook for 3-4 minutes. You may have to cook in batches.
-
Before flipping burger over, spread about 1-2 tsp of yellow mustard on raw side of each burger, flip and cook for another 3-4 minutes or until burgers are cooked to your liking.
-
Assemble double-double burgers: lettuce, animal style sauce, tomatoes, dill pickles, burger patty, caramelized onions, animal sauce, burger patty, jalapeno slices, and lettuce to wrap it all up. If double-double isn’t your thing, you can just use one patty.
