Oven Baked Tostones with Mojo Sauce

Ingredients

For the tostones:

  • 2-3 green plantains
  • ¼ - ½ cup avocado oil
  • Kosher salt

For the mojo sauce:

  • 2 cups avocado oil
  • 1 garlic head minced
  • 1 lemon juiced
  • ½ tsp kosher salt

Instructions

For the tostones:

  1. Preheat oven to 425F. Line a baking sheet with parchment paper.
  2. Cut both ends of the plantains off. Score the plantains deep enough to cut through skin and then peel it off.
  3. Cut the plantains into ½ inch coins.
  4. Place cut plantains in a bowl and toss with avocado oil starting with ¼ cup and kosher salt. Make sure the plantains are coated.
  5. Put plantains on baking sheet in a single layer and bake for 10 minutes.
  6. Remove plantains from oven, flip the plantains, and then flatten with a cup or something flat. Brush the tostones with a little more oil and then bake for an additional 10 minutes or until cooked through and golden.

For mojo sauce:

  1. Add avocado oil, minced garlic, lemon juice, and kosher salt to a saucepan.
  2. On low heat, heat the avocado oil for 15-20 minutes making sure avocado oil doesn’t come to a rapid boil. You just want to heat the avocado oil so the garlic can infuse it. Stir occasionally.
  3. Once done, remove from heat, and store in an airtight container.
