Paleo Bang Bang Chicken Bites

Ingredients
For the chicken:
1 ½
lbs
chicken breast
cubed
¼
cup
arrowroot flour
1
tsp
kosher salt
½
tsp
black pepper
2
tbsp
avocado oil
For the bang bang sauce:
1/3
cup
mayo
3
tbsp
sriracha
or your favorite hot sauce
2
tbsp
rice vinegar
1
tbsp
apple juice
1
garlic clove
minced
½
tsp
fresh ginger
grated
¼
tsp
cayenne pepper
Kosher salt
and black pepper to taste
Instructions
For the chicken:
Preheat skillet over medium-high heat with
avocado oil
.
Mix
arrowroot flour
,
kosher salt
, black pepper and then toss chicken in mixture.
Shake off access arrowroot flour from chicken then add to pan.
Brown on all sides until chicken is cooked through. About 15-20 minutes depending on size of cubed chicken.
Place chicken in a large bowl and toss in bang bang sauce. Start with a few tablespoons and add more if chicken needs more coating.
For the bang bang sauce:
Whisk together all ingredients until well combined. Place in refrigerator until ready to use.
