Paleo Bang Bang Chicken Bites

Ingredients

For the chicken:

For the bang bang sauce:

  • 1/3 cup mayo
  • 3 tbsp sriracha or your favorite hot sauce
  • 2 tbsp rice vinegar
  • 1 tbsp apple juice
  • 1 garlic clove minced
  • ½ tsp fresh ginger grated
  • ¼ tsp cayenne pepper
  • Kosher salt and black pepper to taste

Instructions

For the chicken:

  1. Preheat skillet over medium-high heat with avocado oil.
  2. Mix arrowroot flour, kosher salt, black pepper and then toss chicken in mixture.
  3. Shake off access arrowroot flour from chicken then add to pan.
  4. Brown on all sides until chicken is cooked through. About 15-20 minutes depending on size of cubed chicken.
  5. Place chicken in a large bowl and toss in bang bang sauce. Start with a few tablespoons and add more if chicken needs more coating.

For the bang bang sauce:

  1. Whisk together all ingredients until well combined. Place in refrigerator until ready to use.
