Sweet and Spicy Pulled Pork Sandwiches

Ingredients

Pulled pork

Sweet and spicy broccoli coleslaw

  • 1 bag broccoli slaw mix
  • 1 jalapeño julienned
  • 1/2 apple julienned (use a sweet apple like gala)
  • 1/2 tbsp mayo
  • 1 tbsp BBQ sauce
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Sweet potato "buns"

Sandwiches:

  • Pulled pork
  • Sweet potato "buns"
  • Sweet and spicy broccoli coleslaw
  • BBQ sauce
  • Jalapeno slices

Instructions

Pulled pork

  1. Season pork shoulder with salt.
  2. Place pork shoulder in slow cooker.
  3. Cook on low for 12-14 hours depending on size and slow cooker.
  4. Shred pork shoulder with two forks.

Sweet and spicy broccoli coleslaw

  1. Mix all ingredients in a bowl.
  2. Season to taste with salt and pepper.
  3. Refrigerate for at least an hour or until ready to use.

Sweet potato "buns"

  1. Pre-heat oven to 400F.
  2. Toss sweet potato slices with avocado oil, salt and pepper
  3. Place on baking sheet in one layer.
  4. Roast for 35-40 minutes flipping half way through.
  5. Note: this can also be done on a grill if you're BBQ-ing

Sandwiches

  1. Smear BBQ sauce on sweet potato "buns"
  2. Top buns with pulled pork, broccoli coleslaw and jalapeno slices (optional).
