Cauliflower Fried “Rice”

  • 1 cauliflower head chopped
  • 1 cup shredded chicken any protein will work
  • 1 cup green bell peppers sliced*
  • 1/4 cup cilantro chopped
  • 1 green onion thinly sliced
  • 1 garlic clove minced
  • 1 egg
  • 1 tbsp lime juice
  • 1 tbsp coconut aminos
  • 1/2 tbsp fish sauce
  • 1/2 tbsp ghee
  • Kosher salt and pepper
  • Lime wedges


  1. To make cauliflower rice, place florets in a food processor or blender and pulse until you get rice like consistency.
  2. Pre-heat a skillet over medium-high heat with ghee.
  3. Add in the bell peppers (*feel free to add more diced veggies here) and season with salt & pepper.
  4. When bell peppers start to get tender, add the cauliflower rice, chicken and season with a pinch of salt and pepper. Cook for about 7-10 minutes.
  5. Create a well in the middle of the pan and crack your egg in the center.
  6. Scramble it and then mix it with cauliflower.
  7. Add in your coconut aminos, fish sauce, lime juice and green onions.
  8. Mix until everything is heated through.
  9. Turn heat off, add cilantro and serve with a lime wedges (optional).
