Paleo Nacho Cheese

  1. Boil potatoes and carrots for ~20 minutes.
  2. Blend potatoes and carrots in a blender until smooth.
  3. Add remaining ingredients, half of the reserved water and blend together.
  4. Add more water if necessary to get a smooth and "cheesy" texture.
  5. Season with more salt if necessary.
  6. Serve warm.

Recipe Notes

Refrigerate up to 5 days or freeze until ready to use. When reheating add a couple tablespoons of water to help with consistency.
