Paleo Honey Sriracha Roasted Drumsticks

  1. Preheat oven to 400F. Line a baking sheet with parchment paper or aluminum foil then place a wired baking rack on top. Grease wired baking rack with avocado oil spray or any kind of cooking fat.
  2. Place chicken in a large bowl, with arrowroot flour, kosher salt and black pepper. Toss until chicken is evenly coated with arrowroot flour.
  3. Place chicken on baking rack and roast chicken for 50-55 minutes or until juices run clear and chicken is lightly golden brown and crispy.
  4. Meanwhile, add honey, sriracha and ghee in a saucepan over medium heat. Stir until ghee is melted and sauce is well combined. Remove from heat and set aside.
  5. Remove chicken from oven then turn your oven up to broil. Place chicken in a large clean bowl, pour sauce over chicken, and toss until all pieces are coated.
  6. Put chicken back on the baking rack and broil for 3-4 minutes to crisp up the skin.

*you can use regular sriracha but if you want to stay sugar free, I like to make the sriracha recipe from the Whole30 Fast & Easy cookbook. Nom nom paleo also has a great sriracha recipe!

**if you're doing a Whole30, you can use date paste or apple juice.
